On my seemingly never-ending pursuit of more protein as I work on body recomposition, I combined two of my favorite foods: eggs & cottage cheese.

So fluffy and yummy!

Cottage Scrambled Eggs Recipe

Ingredients
  • 4 large eggs
  • 1/2 cup low-fat cottage cheese
  • 1/4 tsp kosher salt
  • 1/8 tsp ground black pepper
  • 1 Tbsp unsalted butter
Directions
  1. In a medium bowl, whisk 4 large eggs, 1/2 cup low-fat cottage cheese, 1/4 tsp kosher salt, and 1/8 tsp ground black pepper until well-combined.
  2. Heat a small skillet over medium heat on stovetop.
  3. Add 1 Tbsp unsalted butter and melt.
  4. Add egg mixture and cook until just fully cooked through, stirring frequently to ensure you’re not getting a layer of egg stuck to the skillet.
