These 3-Cheese Baked Chicken Bites are tasty!
Already dreaming up other ways I can use them:
– sliced or chopped in salad or topping pasta
– in a wrap or pita with veggies
Tonight I had a double serving as my main with some chopped Caesar salad. Yum! ![]()
3-Cheese Baked Chicken Bites Recipe

Ingredients
- 1 (12.5 oz) can white chunk chicken breast in water
- 1 large egg
- 3 tbsp (15 g) grated Parmesan & Romano cheese
- 1/2 tsp garlic powder
- 1/4 tsp ground black pepper
- 1/3 cup (37.3 g) shredded part-skim Mozzarella cheese
Directions
- Preheat oven to 425° F.
- Line a large baking sheet with parchment paper.
- In a fine mesh strainer, drain 1 (12.5 oz) can white chunk chicken breast in water (remove as much liquid as possible by pressing the chicken against the mesh).
- In a medium bowl, beat 1 large egg.
- Add drained chicken and *shred*, then mix into beaten egg until well-combined.
- In a small bowl, whisk together 3 tbsp (15 g) grated Parmesan & Romano cheese, 1/2 tsp garlic powder, and 1/4 tsp ground black pepper.
- Add grated cheese mixture and 1/3 cup (37.3 g) shredded part-skim mozzarella cheese to chicken mixture and mix until well-combined.
- Using a 1 Tbsp cookie scoop, transfer bites to prepared baking sheet. You should get 15 bites.
- Smush each bite into nugget shape, gently rounding the sides of each.
- Bake for 16 – 18 mins, flipping them at 8 mins in.
