Chicken Tikka Masala

This. is. good.

My fave South Asian dish to date. Never had it fresh before this, tho. Wow! What a difference!

For my carb-needing boys, I make sure to make some long grain white rice to serve under this.

TIP: To make this a Whole30 recipe, use ghee instead of butter.

Chicken Tikka Masala Recipe

Ingredients
  • 2 Tbsp butter
  • 1 small yellow onion, chopped
  • 1 small yellow bell pepper, chopped
  • 1 Tbsp minced garlic
  • 2 tsp garam masala (see my Garam Masala recipe)
  • 1 1/2 tsp sea salt
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1/4 tsp cayenne pepper
  • 1/3 tsp ground ginger
  • 1 (15 oz) can petite diced tomatoes (DO NOT DRAIN!)
  • 1/2 cup full-fat coconut milk
  • 2 lbs thin-cut boneless, skinless chicken breast
Directions
  1. Set Instant Pot to SAUTÉ – NORMAL and allow to heat for at least 30 secs.
  2. Add 2 Tbsp butter to inner pot and melt.
  3. Add chopped 1 small yellow onion and chopped 1 small yellow bell pepper, then sauté until veggies begin to soften.
  4. Add 1 Tbsp minced garlic, 2 tsp Garam Masala seasoning, 1 1/2 tsp sea salt, 1 tsp ground coriander, 1 tsp ground cumin, 1 tsp turmeric, 1/4 tsp cayenne pepper, and 1/3 tsp ground ginger then continue to sauté for 1 min.
  5. Add 1 – 15 oz can of undrained petite diced tomatoes and 1/2 cup full-fat coconut milk, stirring well to combine – then select CANCEL.
  6. Place 2 lbs thin-cut boneless, skinless chicken breasts on top of mixture.
  7. Spooning some sauce over the chicken so there isn’t too much bare chicken showing, but so that chicken isn’t left resting directly on bottom of the pot without sauce underneath.
  8. Close the lid and set to SEAL.
  9. Select PRESSURE COOK (or MANUAL) for 7 mins.
  10. When cooking cycle completes, allow a natural release (NR) for 5 mins then do a quick release (QR).
  11. Transfer cooked chicken to a large bowl, allowing excess sauce to drip back into IP, and shred using 2 forks.
  12. Purée the sauce in the inner pot using an immersion blender.
  13. Place shredded chicken back into sauce and stir to combine.
