Spinach Artichoke Dip Recipe

Ingredients
- 4 oz whipped cream cheese
- 60 g (1/4 cup) light sour cream
- 42 g (6 Tbsp) shredded Parmesan cheese
- 14 g (2 Tbsp) crumbled goat cheese
- 0.5 g (1/4 tsp) crushed red pepper
- 5 oz chopped baby spinach (washed and trimmed of stems)
- 127.5 g chopped artichoke hearts (about 1/2 of 14 oz can artichoke hearts, drained)
Instant Pot (Slow Cook option) Directions
- In a medium bowl, mix together 4 oz whipped cream cheese and 60 g (1/4 cup) light sour cream.
- Whisk in 42 g (6 Tbsp) shredded Parmesan cheese, 14 g (2 Tbsp) crumbled goat cheese, and 0.5 g (1/4 tsp) crushed red pepper.
- Add 5 oz chopped baby spinach leaves and mixture from medium bowl to Instant Pot’s (IP) inner pot and stir gently until just combined.
- Close lid, then select SLOW COOK for 1 hr + 30 mins.
- When cooking cycle is complete, remove lid.
- Stir, then allow to cool (uncovered) for 15 mins before serving.
Slow Cooker Directions
- In a medium bowl, mix together 4 oz whipped cream cheese and 60 g (1/4 cup) light sour cream.
- Whisk in 42 g (6 Tbsp) shredded Parmesan cheese, 14 g (2 Tbsp) crumbled goat cheese, and 0.5 g (1/4 tsp) crushed red pepper.
- Add 5 oz chopped baby spinach leaves and mixture from medium bowl to slow cooker’s inner pot and stir gently until just combined.
- Cover, then heat on high 1 1/2 hrs, until hot and cheese is just melted.
- When cooking is complete, stir, then allow to cool (uncovered) for 15 mins before serving.
