Baked Sweet Potato Fries Recipe

Ingredients
- 2 lbs sweet potatoes
- 2 Tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 4.8 g (1 tsp) kosher salt
- 1/2 tsp ground black pepper
Directions
- Preheat oven to 400◦ F.
- Line baking sheet(s) with parchment paper, then set aside.
- Wash and peel 2 lbs sweet potatoes.
- Cut potatoes into about 1/4″ to 1/2″ slices about 3″ long. Think “French fry” size. Mine pictured above were the 1/2″ version.
- Add slices to a large bowl and fill with water – just enough to mostly cover sweet potato slices – and soak for at least 30 mins (up to overnight).
- Drain soaked sweet potatoes and pat dry.
- To a gallon-size Ziplock bag, add patted dry sweet potato slices.
- In a small bowl, make marinade by whisking together 2 Tbsp extra virgin olive oil, 1 tsp garlic powder, 1 tsp paprika, 1 tsp kosher salt, and 1/2 tsp ground black pepper.
- Pour marinade over bagged sweet potato slices, seal bag, and toss until evenly coated. If you’re not ready to bake right away, set in fridge to marinate for a bit.
- Spread seasoned potato slices on prepared baking sheet(s) in one layer.
- Bake about 15 mins, until brown and crisp on the bottoms.
- Remove from oven and flip.
- Return to oven and cook about 10 mins more until crisp.
- Serve immediately.
