I’ve avoided this craze for quite some time. But, with needing to hit #MacroGoals, one must challenge oneself to try new things!

Finally crafted a recipe I enjoy…

NOTE: If adding a protein powder and using a sweetened version, leave out maple syrup and vanilla.

TIPS: Although overnight oats are typically served cold, you can microwave in a microwave-safe container for 90 secs to heat prior to eating, if desired. Whether eating cold or warm, add toppings just before serving.

  1. In a medium container, whisk together 1/2 cup unsweetened almond milk and 1/4 cup plain nonfat Greek yogurt, until well-combined.
  2. Whisk in 1 Tbsp chia seeds.
  3. Whisk in 1 Tbsp pure maple syrup and 1/4 tsp pure vanilla extract, until well-combined.
  4. Whisk in 1 scoop collagen protein powder, until well-combined.
  5. Whisk in 1/2 cup rolled oats until all oats and chia seeds are submerged and you don’t see any clumping.
  6. Seal container with lid (or use cling wrap).
  7. Refrigerate for at least 4 hours… preferably overnight. 

NOTE: Nutrition Facts include use of collagen protein powder.
