Turkey Bacon Scramble Recipe

Ingredients
  • 4 oz liquid egg whites
  • 1/8 tsp ground black pepper
  • 2 slices turkey bacon
Directions
  1. Pan fry 2 slices turkey bacon according to package instructions, then drain on a paper-towel lined plate.
  2. Once bacon is cool enough to handle, dice into bite-sized pieces.
  3. In a very large mug, whisk together 4 oz liquid egg whites and 1/8 tsp ground black pepper until frothy.
  4. Add diced pan-fried bacon and gently stir to distribute as evenly as possible.
  5. Microwave on high for 1 min, until just fully cooked through.
  6. Run a large spoon around edges of the scramble and gently under its bottom to transfer to a plate and enjoy!
