I initially crafted this recipe to accompany my Cream of Coconut Cake.

This recipe yields a dry cake mix equivalent to a standard 15.25 oz (approx. 432g) store-bought commercial cake mix box, which typically makes a single 9″ x 13″ inch cake or 24 cupcakes. 

Making your own white cake mix substitute at home offers complete control over the ingredients, leading to a product free of preservatives and artificial additives found in many commercial mixes. This control allows for a fresher, more natural, and healthier cake! 

TIP: Replace about 1 1/2 Tbsp of the AP flour w/ cornstarch to make a lighter cake than the dense version below.

White Cake Mix Recipe

Ingredients
  • 360 g (2 1/2 cups) all-purpose flour
  • 1 3/4 cups granulated sugar  
  • 1 Tbsp baking powder  
  • 1/2 tsp kosher salt
Directions
  1. In a large bowl, whisk together 360 g (2 1/2 cups) all-purpose flour, 1 3/4 cups granulated sugar, 1 Tbsp baking powder, and 1/2 tsp kosher salt.
  2. Store in the cupboard/pantry in an airtight container for up to 1 mo. or freeze for up to 6 mos. in an airtight, freezer-safe container.

WARNING: I really shouldn’t have to say it, but I’ve got to. Do NOT consume this recipe without combining with wet ingredients and baking.
