Roasted Zucchini Mug Omelette Recipe

  1. Whisk 12 Tbsp liquid egg whites in a large mug until frothy.
  2. Gently drop in chopped roasted zucchini.
  3. Microwave on high 3 to 3 1/2 mis. I do this for 1 min, then 1 min, then in 30 sec increments.
