Roasted Zucchini Mug Omelette Recipe

Ingredients
- 12 Tbsp liquid egg whitesÂ
- 8 spears from Roasted Zucchini recipe, chopped
Directions
- Whisk 12 Tbsp liquid egg whites in a large mug until frothy.
- Gently drop in chopped roasted zucchini.
- Microwave on high 3 to 3 1/2 mis. I do this for 1 min, then 1 min, then in 30 sec increments.
