  1. Heat a large skillet over medium-high heat on stovetop.
  2. Add 1 Tbsp extra virgin olive oil and heat.
  3. Add thinly sliced 1 medium red onion; 4 tsp minced garlic; and 1 lb peeled, deveined, and tail off large shrimp.
  4. Sauté for 2 mins. NOTE: Shrimp will not be fully cooked at this step.
  5. Stir in 1 (14.5 oz) can petite diced tomatoes, 1 Tbsp lemon juice, and 1 tsp honey.
  6. Add 1 tsp chili powder, 1 tsp dried oregano, 1 tsp dried parsley, 1 tsp dried thyme, and 1/2 tsp ground black pepper – stir until well-combined.
  7. Decrease heat to medium and cook 10 mins, stirring occasionally.
  8. Remove from heat and sprinkle with feta cheese.
