Savory Pork Tenderloin Recipe

Ingredients
- 1/2 tsp ground black pepper
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp Nearly Italian Seasoning
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp coarse kosher salt
- 1 1/2 lb pork tenderloin, trimmed of any excess fat
- 1 tbsp extra virgin olive oil
- 1/2 cup beef stock
Directions
- In a small bowl, whisk together 1/2 tsp ground black pepper, 1/4 tsp chili powder, 1/2 tsp garlic powder, 1/2 tsp Nearly Italian Seasoning, 1/2 tsp onion powder, 1/4 tsp paprika, and 1/2 tsp coarse kosher salt.
- Rub seasoning mixture into all sides of the 1 1/2 lb pork tenderloin.
- Select SAUTÉ – NORMAL on your Instant Pot (IP).
- Once the IP reads HOT, add 1 Tbsp extra virgin olive oil to inner pot.
- Add 1 1/2 lb pork tenderloin, searing 2 mins per side on all 4 sides, then select CANCEL.
- Turn seared pork tenderloin onto 4th side then pour 1/2 cup beef stock over it.
- Close the lid and select PRESSURE COOK (or MANUAL) 3 mins.
- When the cooking cycle ends, allow natural release (NR) for 10 mins then do a quick release (QR). My NR is typically done releasing around 7 mins.
- When pressure pin drops, open IP and transfer tenderloin to a large cutting board and allow to rest until the internal temperature reaches 145â—¦ F. We then like to slice into 3/4″ medallions and plate.
