I have to admit—I didn’t expect my family to be this excited about a potato dish with two of their not-so-favorite flavors: mustard & dill. But from the moment I watched their first bites, I knew something special was happening.

Every bite is just a little addictive—I might have been tempted to eat more than my fair share.

What I love most is how easy this dish is. It feels fancy enough for a dinner party but takes very little effort, which is perfect for busy weeknights. And the best part? They’re not just delicious—they’re packed with fiber, vitamin C, and potassium, so I feel good enjoying them.

Honestly, these may quickly become one of my favorite go-to sides. They’re simple, satisfying, and full of flavor—a reminder that sometimes the easiest dishes are the ones that leave the biggest impression.
