What I love most is how easy this dish is. It feels fancy enough for a dinner party but takes very little effort, which is perfect for busy weeknights. And the best part? They’re not just delicious—they’re packed with fiber, vitamin C, and potassium, so I feel good enjoying them.
Honestly, these may quickly become one of my favorite go-to sides. They’re simple, satisfying, and full of flavor—a reminder that sometimes the easiest dishes are the ones that leave the biggest impression.
Mustard & Dill Roasted Gold Potatoes Recipe

Ingredients
- 2 Tbsp extra virgin olive oil
- 2 tsp spicy brown mustard
- 1 tsp dried dill
- 1 tsp onion powder
- 3/4 tsp coarse kosher salt
- 1/2 tsp ground black pepper
- 1/2 tsp garlic powder
- 1 1/2 lbs mini gold potatoes, quartered
Directions
- Line an extra large baking sheet with parchment paper, then set aside.
- Adjust oven racks so that one is in the lower 1/3 of oven.
- Preheat oven to 425° F.
- In a small bowl, whisk together marinade: 2 Tbsp extra virgin olive oil, 2 tsp spicy brown mustard, 1 tsp dried dill, 1 tsp onion powder, 3/4 tsp coarse kosher salt, 1/2 tsp ground black pepper, and 1/2 tsp garlic powder.
- To a gallon-size Ziploc bag, add quartered 1 1/2 lbs mini gold potatoes.
- Pour marinade over potatoes, seal bag, then gently toss until potatoes are well-coated. These can be refrigerated for a bit if you’re not ready to use them right away.
- Spread marinated potatoes in a single layer on prepared baking sheet.
- Bake 10 mins then pull out and stir around.
- Return to oven and bake an additional 10 mins – until potatoes are browning lightly and fork-tender.
