Crafted a new veggie recipe tonight to accompany John’s Turkey Meatloaf. He wasn’t sure the two dishes went together, but I thought they were great. Yum!

Garlic Herb Sautéed Bell Peppers & Red Onion Recipe

Ingredients
  • 2 Tbsp extra virgin olive oil
  • 2 tsp minced garlic
  • 1 tsp dried parsley
  • 1/2 tsp dried thyme
  • 1/4 tsp dried crushed rosemary
  • 1/4 tsp onion powder
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper
  • 1 green bell pepper (trimmed and seeded), sliced
  • 1 red bell pepper (trimmed and seeded), sliced
  • 1 yellow bell pepper (trimmed and seeded), sliced
  • 1 medium red onion, sliced into wedges
  • 1 Tbsp lemon juice
Directions
  1. Make marinade in a small bowl by whisking together 2 Tbsp extra virgin olive oil, 2 tsp minced garlic, 1 tsp dried parsley, 1/2 tsp dried thyme, 1/4 tsp dried crushed rosemary, 1/4 tsp onion powder, 1/2 tsp sea salt, and 1/4 tsp ground black pepper until well combined.
  2. To a gallon-size zip top bag, add slices of: 1 green bell pepper, 1 red bell pepper, and 1 yellow bell pepper and wedges of 1 medium red onion.
  3. Pour the marinade over the bagged veggies. Seal the bag and toss until evenly coated.
  4. Heat a large wok over medium heat.
  5. Add marinated veggies and cook 10–12 mins, stirring every 2–3 mins, until the peppers are tender-crisp and lightly charred and the onions are caramelized.
  6. Remove from heat and drizzle with 1 Tbsp lemon juice then toss to coat and serve immediately.
