Raspberry Lemon Coconut Muffins Recipe

Ingredients
- 42 g (3 Tbsp) virgin cold-pressed unrefined coconut oil
- 140 g (1 1/4 cup) almond flour, finely ground
- 4.8 g (1 tsp) baking powder
- 1.2 g (1/4 tsp) sea salt
- 0.8 g (1/4 tsp) xanthan gum
- 2 large eggs, at room temperature
- 96 g (1/2 cup) Wholesome Yum Nature’s Besti Monk Fruit & Allulose Blend Granulated Sugar Substitute
- 1 Tbsp lemon juice
- 4 g (1 tsp) pure vanilla extract
- 1 g (1/2 tsp) lemon zest
- 50 g (1/2 cup) frozen raspberries
Directions
- Preheat oven to 375° F.
- Line a muffin pan with 6 paper muffin liners.
- To a small ramekin, add 42 g (3 Tbsp) virgin cold-pressed unrefined coconut oil and melt in microwave, then set aside to cool slightly.
- In a medium mixing bowl, whisk together 140 g (1 1/4 cup) finely ground almond flour, 4.8 g (1 tsp) baking powder, 1.2 g (1/4 tsp) salt, and 0.8 g (1/4 tsp) xanthan gum,
- In a large mixing bowl, whisk together 2 room temperature large eggs and 42 g (3 Tbsp) slightly cooled virgin cold-pressed unrefined coconut oil.
- Whisk into the coconut oil mixture 96 g (1/2 cup) Wholesome Yum Nature’s Besti Monk Fruit & Allulose Blend Granulated Sugar Substitute, 1 Tbsp lemon juice, 4 g (1 tsp) vanilla extract, and (1 g) 1/2 tsp lemon zest.
- Gently fold the dry mixture into the wet mixture until just combined.
- Gently fold 50 g (1/2 cup) frozen raspberries into the mixture until just combined.
- Divide the batter evenly between the 6 muffin liners in the muffin pan.
- Bake 30 mins, until a toothpick inserted in the center of a muffin comes out clean.
- Cool in the pan for at least 5 mins before removing the muffins from the pan to cool on a wire rack.
