

Hubby wanted peanut butter cookies (of which I’m not typically a big fan). So… I spruced them up w/ honey and butterscotch chips.
Played around w/ a few versions to get a preferred consistency and these are gold!
TIPS: You can also chill the dough and then cut it like in my Smør Cookies (Danish Butter Cookies) recipe if you’re not ready to bake right after prepping dough!
Tres Dulces Cookies Recipe

Ingredients
- 2 large eggs, at room temperature
- 360 g (3 cups) all purpose flour
- 337 g (1 cup) honey
- 256 g (1 cup) creamy peanut butter
- 200 g (1 cup) granulated sugar
- 96 g (1/2 cup) shortening
- 1 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp coarse kosher salt
- 170 g (1 cup) butterscotch chips
Directions
- Preheat oven to 350° F.
- Cover baking sheets w/ parchment paper and set aside.
- In a small bowl, lightly beat 2 large eggs, then set aside.
- In a large bowl, mix 337 g (1 cup) honey, 256 g (1 cup) peanut butter, and 96 g (1/2 cup) shortening until well combined.
- Add beaten eggs and mix until well combined.
- In another large bowl, whisk together 360 g (3 cups) flour, 200 g (1 cup) granulated sugar, 1 1/2 tsp baking soda, 1 tsp baking powder, and 1/2 tsp coarse kosher salt.
- Slowly, while continually mixing on low-medium speed, add flour mixture into egg mixture, then mix (at medium-high speed) until well combined.
- Fold into batter 170 g (1 cup) butterscotch chips.
- Scoop into dough balls using a 1 Tbsp cookie scoop and drop onto baking sheets.
- Bake for 10-12 mins.
- Allow to cool on baking sheets for 5 mins then transfer to wire racks to
cool completely.
