Vegetarian nite requires gettin’ crafty. I don’t have much of a meatless repertoire for meals that fall w/in my various eating goals of the last 2 years.

And… I’m darn proud of this one! My husband started eating from the pot w/ a look of rapture on his face. 😆

I had planned to serve mine over brown rice but must have already eaten it w/ something else. So, I had to steal some of my boys’ Thai Jasmine Rice.

Lentil Tikka Masala Recipe

Ingredients
  • 1 (15 oz) can petite diced tomatoes (DO NOT DRAIN!)
  • 210 g (1 1/2 cups) uncooked green lentils
  • 1 1/2 cups vegetable broth
  • 113 g chopped yellow onion (about 1 small)
  • 74 g chopped yellow bell pepper (about 1 small after trimming and seeding)
  • 1/2 cup lite coconut milk
  • 2 Tbsp butter
  • 1 Tbsp minced garlic
  • 2 tsp Garam Masala
  • 1 1/2 tsp sea salt
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1/3 tsp ground ginger
  • 1/4 tsp cayenne
Directions
  1. Set Instant Pot to SAUTÉ – NORMAL and allow to heat for at least 30 secs.
  2. Add 2 Tbsp butter to inner pot and melt.
  3. Add 113 g chopped yellow onion and 74 g chopped yellow bell pepper, then sauté until veggies begin to soften.
  4. Add 1 Tbsp minced garlic, 2 tsp Garam Masala, 1 1/2 tsp sea salt, 1 tsp ground coriander, 1 tsp ground cumin, 1 tsp ground turmeric, 1/4 tsp cayenne, and 1/3 tsp ground ginger then continue to sauté for 1 min.
  5. Add 1 (15 oz) can of undrained petite diced tomatoes, 1/2 cup lite coconut milk, 210 g uncooked green lentils, and 1 1/2 cups vegetable broth – then stir well to combine.
  6. Close the lid and set to SEAL.
  7. Select PRESSURE COOK (or MANUAL) for 15 mins.
  8. When cooking cycle completes, allow a natural release (NR) for 10 mins, then do a quick release (QR) of any remaining pressure and remove lid.
  9. Stir then plate.
