NOTE: To make this a Whole30 recipe, substitute EVOO, refined coconut oil, or ghee for the butter.

Citrus Baked Salmon Recipe

Ingredients
  • 3 (5 oz) salmon filets
  • 2 Tbsp lemon juice
  • 2 Tbsp lime juice
  • 2 Tbsp orange juice
  • 1/2 tsp butter, melted
  • 1/2 tsp dried parsley
  • 1/4 tsp ground paprika
  • 1/8 tsp sea salt
  • 1/8 tsp ground black pepper
  • Extra virgin olive oil (EVOO) spray
Directions
  1. Preheat oven to 350 F.
  2. Spray an 8″ x 8″ baking dish lightly with EVOO.
  3. Place salmon filets in baking dish.
  4. In a small bowl, mix together 2 Tbsp lemon juice, 2 Tbsp orange juice, and 2 tbsp lime juice, 1/2 tsp melted butter, 1/2 tsp parsley, 1/4 tsp paprika, 1/8 tsp salt, and 1/8 tsp black pepper until well blended.
  5. Drizzle juice mixture over salmon.
  6. Bake 20 – 25 mins, until fish easily flakes with a fork.
  7. When done cooking, insert a meat thermometer into the thickest center of a filet to obtain a reading of at least 145 F.
