As you can see in the picture above, I served this w/ my Garlic Cheese Herbed Cauliflower Crown.
I plan to play around with coating medallions in cheese, then egg, then Panko mixture, too…
TIP: Sub in 1 lb boneless, skinless chicken tenders for the pork tenderloin to make our Panko-crusted Chicken Tenders version! You may want to add some kosher salt to taste for the chicken version as pork is saltier by nature. Tenders will also need to cook a bit longer on each side – think maybe 5-6 mins each side depending on thickness of the tenders used.

Panko-crusted Pork Tenderloin Medallions Recipe

Ingredients
- 1 lb pork tenderloin, cut into medallions
- 1 large egg
- 1/2 cup Panko breadcrumbs
- 6 Tbsp grated Parmesan cheese
- 2 Tbsp extra virgin olive oil (EVOO)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/4 tsp freshly ground black pepper
Directions
- In a shallow plate, lightly beat 1 egg.
- In another shallow plate, whisk together 1/2 cup breadcrumbs, 1/2 tsp basil, 1/2 tsp oregano, 1 tsp garlic powder, 1 tsp onion powder, and 1/4 tsp black pepper.
- In a third shallow plate, place 6 Tbsp grated Parmesan.
- Heat a large skillet on stovetop over medium-high heat.
- Add 1 Tbsp EVOO and heat.
- Dip each medallion first in beaten egg, then Panko mixture, and then Parmesan.
- Add 1/2 of medallions to skillet and brown each side (about 4 mins each side) then set aside.
- Add remaining 1 Tbsp EVOO to skillet.
- Add remaining 1/2 of medallions to skillet and brown each side (about 4 mins each side) then plate all medallions or serve on platter.
