Was gonna do this one on my own but my boys got excited when they heard what I was making and decided to lend a hand.

A first try at this recipe and it’s SO good!!!

Cheesy Bacon & Broccoli Chicken Recipe

Ingredients
  • 1 1/2 lbs thin-cut boneless, skinless chicken breasts (trimmed)
  • 8 slices bacon, cooked and crumbled (see Bacon Bits recipe)
  • 4 cups broccoli florets
  • 1 cup freshly shredded sharp Cheddar cheese
  • 1/2 cup heavy whipping cream
  • 1/4 cup unsalted butter
  • 1 Tbsp minced garlic
  • 1/4 tsp ground black pepper
  • extra virgin olive oil spray
Instructions
  1. Preheat oven to 400 F.
  2. Spray a 9″ x 13″ baking dish with extra virgin olive oil.
  3. Season 1 1/2 lbs thin-cut boneless, skinless chicken breasts on both sides w/ 1/4 tsp black pepper.
  4. Place seasoned chicken into baking dish.
  5. Bake for 30 mins (or until a meat thermometer inserted into thickest part of chicken reads at least 165 F).
  6. While chicken is baking, melt 1/4 cup butter in a medium skillet over medium-low heat on stovetop.
  7. Stir in 1/2 cup heavy whipping cream and 1 Tbsp minced garlic then cook until warm.
  8. Reduce heat to low and stir in 1 cup freshly shredded sharp Cheddar cheese, a little bit at a time, until melted and then remove from heat.
  9. Steam 4 cups broccoli florets using method of choice (e.g., Instant Pot, microwave, stovetop).
  10. Once chicken is done baking, drain the chicken juices.
  11. Sprinkle steamed broccoli over cooked chicken in baking dish.
  12. Pour cheese sauce over broccoli layer.
  13. Sprinkle bacon bits from 8 slices of bacon on top of cheese sauce layer.
