It’s sweet and full of fiber. Plus, winter squashes – like butternut squash – remind me of my favorite time of year: Fall!
Agave Cinnamon Roasted Butternut Squash Recipe
Ingredients
- 20 oz butternut squash, cut into approx. 1″ cubes
- 2 1/4 tsp raw agave syrup
- 2 1/4 tsp extra virgin olive oil (EVOO)
- 3/4 tsp ground cinnamon
- 3/4 tsp kosher salt
- 1/2 tsp ground black pepper
- 1 Tbsp fresh rosemary, chopped (optional)
Directions
- Line two medium baking sheets with parchment paper.
- Position oven racks in the upper and lower thirds of your oven.
- Preheat oven to 400° F.
- In a gallon-size Ziplock bag, add 20 oz 1″ cubed butternut squash.
- Drizzle with 2 1/4 tsp raw agave syrup and 2 1/4 tsp EVOO.
- Seal bag and toss gently until squash is fully coated.
- Open bag and sprinkle with 3/4 tsp ground cinnamon, 3/4 tsp kosher salt, and 1/2 tsp ground black pepper.
- Seal bag and toss gently until squash is equally coated.
- Open bag and divide coated squash cubes between the two baking sheets, spreading evenly in a single layer.
- Place baking sheets in over, with one sheet on the upper rack and the other on the lower third rack.
- Bake for 15 mins.
- Remove baking sheets from oven, turn the cubes, then return to the oven switching places on racks (the one that was on upper goes on lower and vice versa).
- Bake for about 15 mins more, until squash is tender.
- Remove from the oven and, if using, sprinkle w/ 1 Tbsp fresh rosemary.
