Agave Cinnamon Roasted Butternut Squash

It’s sweet and full of fiber. Plus, winter squashes – like butternut squash – remind me of my favorite time of year: Fall!

Agave Cinnamon Roasted Butternut Squash Recipe

Ingredients
  • 20 oz butternut squash, cut into approx. 1″ cubes
  • 2 1/4 tsp raw agave syrup
  • 2 1/4 tsp extra virgin olive oil (EVOO)
  • 3/4 tsp ground cinnamon
  • 3/4 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1 Tbsp fresh rosemary, chopped (optional)
Directions
  1. Line two medium baking sheets with parchment paper.
  2. Position oven racks in the upper and lower thirds of your oven.
  3. Preheat oven to 400° F.
  4. In a gallon-size Ziplock bag, add 20 oz 1″ cubed butternut squash.
  5. Drizzle with 2 1/4 tsp raw agave syrup and 2 1/4 tsp EVOO.
  6. Seal bag and toss gently until squash is fully coated.
  7. Open bag and sprinkle with 3/4 tsp ground cinnamon, 3/4 tsp kosher salt, and 1/2 tsp ground black pepper.
  8. Seal bag and toss gently until squash is equally coated.
  9. Open bag and divide coated squash cubes between the two baking sheets, spreading evenly in a single layer.
  10. Place baking sheets in over, with one sheet on the upper rack and the other on the lower third rack.
  11. Bake for 15 mins.
  12. Remove baking sheets from oven, turn the cubes, then return to the oven switching places on racks (the one that was on upper goes on lower and vice versa).
  13. Bake for about 15 mins more, until squash is tender.
  14. Remove from the oven and, if using, sprinkle w/ 1 Tbsp fresh rosemary.
