Almond Flour Focaccia

For any who have been following my recipes on FB for a while, you may recall my big mishap with blueberry bagels when I first attempted a cheese-based bread baking recipe. Now that I have my (okay, okay, we share it in the family) awesome KitchenAid Stand Mixer, this recipe was a piece of cake (or maybe focaccia)! 🤣

So good! I love focaccia and have really missed it. I was skeptical how this almond flour version would be. But, was pleasantly surprised. On that note, I’m going to go grab another piece!

I serve this with my Cobb Salad

Almond Flour Focaccia Recipe

Ingredients
  • extra virgin olive oil spray
  • 168 g (1 1/2 cups) almond flour
  • 1 Tbsp baking powder
  • 1 large egg, lightly beaten
  • 168 g (1 1/2 cups) shredded part skim Mozzarella
  • 1 oz cream cheese
  • 1 tsp dried crushed rosemary
  • 1/2 tsp sea salt
Directions
  1. Preheat your oven to 350â—¦ F.
  2. Line an 8″ square glass baking dish’s bottom with parchment paper, and very lightly spray the parchment paper w/ extra virgin olive oil.
  3. In a large bowl, mix 168 g (1 1/2 cups) almond flour, 1 Tbsp baking powder, and 1 lightly beaten egg until well combined.
  4. In a medium microwave-safe bowl, add 168 g (1 1/2 cups) shredded part skim Mozzarella then top it with 1 oz cream cheese in dabs (see picture) and microwave for 30 secs.
  5. Stir, then microwave for 40 secs.
  6. Stir again, then quickly knead cheese mixture into flour mixture. You must do this before the dough cools!
  7. Continue to knead the dough by hand until smooth.
  8. Press the dough into the baking dish. This is easier to do with lightly oiled hands.
  9. With a finger, make dimples in the dough (see middle picture above). You can make this more hygienic by wrapping a fingertip in clingwrap and spraying the wrap lightly w/ extra virgin olive oil before making dimples.
  10. Scatter 1 tsp dried crushed rosemary on top of the dough, gently pressing into the dough, then sprinkle with 1/2 tsp sea salt.
  11. Liberally spray the top of the bread with extra virgin olive oil.
  12. Bake 17 mins, until slightly risen and golden brown (see bottom picture).
  13. Cool in the dish on top of the stover or on a cooling rack for at least 15 mins before cutting and serving.
