Almond Flour Focaccia

For any who have been following my recipes on FB for a while, you may recall my big mishap with blueberry bagels when I first attempted a cheese-based bread baking recipe. Now that I have my (okay, okay, we share it in the family) awesome KitchenAid Stand Mixer, this recipe was a piece of cake (or maybe focaccia)! 🤣

So good! I love focaccia and have really missed it. I was skeptical how this almond flour version would be. But, was pleasantly surprised. On that note, I’m going to go grab another piece!

I serve this with my Cobb Salad

Almond Flour Focaccia Recipe

Ingredients
  • 1 1/2 cups almond flour
  • 1 1/2 cups shredded part skim mozzarella
  • 1 large egg, lightly beaten
  • 1 oz cream cheese
  • 1 Tbsp baking powder
  • 1 tsp dried rosemary
  • 1/2 tsp freshly ground sea salt
  • Extra virgin olive oil (EVOO) spray
Directions
  1. Preheat your oven to 350â—¦ F.
  2. Line an 8″ square glass baking dish’s bottom with parchment paper, and very lightly spray the parchment paper w/ EVOO.
  3. In a large bowl, mix 1 1/2 cups almond flour, 1 Tbsp baking powder, and 1 lightly beaten egg until well combined.
  4. In a medium microwave-safe bowl, add 1 1/2 cups shredded mozzarella then top it with 1 oz cream cheese in dabs (see picture) and microwave for 30 secs.
  5. Stir, then microwave for 40 secs.
  6. Stir again, then quickly knead cheese mixture into flour mixture. You must do this before the dough cools!
  7. Continue to knead the dough by hand until smooth.
  8. Press the dough into the baking dish. This is easier to do with lightly oiled hands.
  9. With a finger, make dimples in the dough (see middle picture above). You can make this more hygienic by wrapping a fingertip in clingwrap and spraying the wrap lightly w/ EVOO before making dimples.
  10. Scatter 1 tsp rosemary on top of the dough, gently pressing into the dough, then sprinkle with 1/2 tsp salt.
  11. Liberally spray the top of the bread with EVOO.
  12. Bake 17 mins, until slightly risen and golden brown (see bottom picture).
  13. Cool in the dish on top of the stover or on a cooling rack for at least 15 mins before cutting and serving.
