Apple Harvest Chicken Recipe

Ingredients
  • 3 Tbsp extra virgin olive oil (divided)
  • 1 tsp ground black pepper
  • 1/2 tsp ground cinnamon
  • 1/2 tsp coriander
  • 1/2 tsp garlic powder
  • 1/2 tsp ground nutmeg
  • 1/2 tsp coarse kosher salt
  • 1/2 tsp dried thyme leaves
  • 1 lb thin-cut boneless, skinless chicken breast
  • 2 Tbsp honey
  • 2 tbsp spicy brown mustard
  • 1 Tbsp light brown sugar
  • 2 shallots, sliced
  • 2 cups (300 g) Honeycrisp apples, sliced
  • 1/3 cup apple cider
  • 1 tsp arrowroot powder
  • 1 tsp cold water
Directions
  1. In a small bowl, whisk together 1 tsp ground black pepper, 1/2 tsp ground cinnamon, 1/2 tsp coriander, 1/2 tsp garlic powder, 1/2 tsp ground nutmeg, 1/2 tsp kosher salt, and 1/2 tsp dried thyme leaves.
  2. Rub seasoning mix into 1 lb thin-cut boneless, skinless chicken breast.
  3. Set Instant Pot (IP) to SAUTÉ – HIGH.
  4. Once IP reads HOT, add 1 tbsp extra virgin olive oil to IP’s inner pot.
  5. Add seasoned chicken and sear 2 mins per side.
  6. Transfer seared chicken to a plate and keep warm.
  7. Add remaining 2 Tbsp extra virgin olive oil to IP’s inner pot.
  8. Add 2 Tbsp honey, 2 tbsp spicy brown mustard, 1 Tbsp light brown sugar, and 2 sliced shallots.
  9. Sauté 3 mins until shallots are glossy and starting to caramelize.
  10. Add 2 cups (300 g) sliced Honeycrisp apples and stir until apple slices are well-coated.
  11. Add 1/3 cup Signature Select apple cider.
  12. Deglaze pot, then select CANCEL.
  13. Add seared chicken and stir to combine.
  14. Select PRESSURE COOK (or MANUAL) for 7 mins.
  15. Once cooking cycle completes, allow a natural release (NR) for 10 mins, then do a quick release (QR) of any remaining pressure, then select CANCEL.
  16. Transfer cooked chicken to a plate to rest.
  17. Set IP to SAUTÉ – NORMAL.
  18. In a small bowl, make a slurry by whisking together 1 tsp arrowroot powder and 1 tsp cold water.
  19. Add slurry to pot and simmer sauce for about 3 mins, stirring constantly, until sauce reaches your desired thickness.
