Athens Chicken Recipe

Ingredients
  • 2 lbs boneless skinless chicken breast, thin-cut and trimmed
  • 1/2 cup nonfat plain Greek yogurt
  • 5 tsp minced garlic
  • 2 tsp red wine vinegar
  • 1 1/2 tsp extra virgin olive oil (EVOO)
  • 1 1/2 tsp dried oregano
  • 1 1/2 tsp kosher salt, divided
  • 1 tsp ground turmeric
  • 1/8 tsp ground black pepper
  • 1/8 tsp crushed red pepper flakes
Directions
  1. In a large bowl, whisk together 1/2 cup nonfat plain Greek yogurt, 5 tsp minced garlic, 2 tsp red wine vinegar, 1 1/2 tsp EVOO, 1 1/2 tsp dried oregano, 1 1/4 tsp kosher salt, 1 tsp ground turmeric, and 1/8 tsp crushed red pepper flakes.
  2. Add 2 lbs chicken and stir to coat. I like to use a rubber spatula to flip and fully coat the chicken breasts.
  3. Cover with lid or plastic wrap then refrigerate for 1 hr. You can allow chicken to marinate longer, but don’t do for more than a quick overnight.
  4. Preheat BBQ to medium-low and oil grates.
  5. Sprinkle chicken breasts with 1/4 tsp kosher salt and 1/8 tsp ground black pepper.
  6. Grill chicken, about 4-6 mins on each side, until fully cooked.
