Athens Chicken Recipe
Ingredients
- 2 lbs boneless skinless chicken breast, thin-cut and trimmed
- 1/2 cup nonfat plain Greek yogurt
- 5 tsp minced garlic
- 2 tsp red wine vinegar
- 1 1/2 tsp extra virgin olive oil (EVOO)
- 1 1/2 tsp dried oregano
- 1 1/2 tsp kosher salt, divided
- 1 tsp ground turmeric
- 1/8 tsp ground black pepper
- 1/8 tsp crushed red pepper flakes
Directions
- In a large bowl, whisk together 1/2 cup nonfat plain Greek yogurt, 5 tsp minced garlic, 2 tsp red wine vinegar, 1 1/2 tsp EVOO, 1 1/2 tsp dried oregano, 1 1/4 tsp kosher salt, 1 tsp ground turmeric, and 1/8 tsp crushed red pepper flakes.
- Add 2 lbs chicken and stir to coat. I like to use a rubber spatula to flip and fully coat the chicken breasts.
- Cover with lid or plastic wrap then refrigerate for 1 hr. You can allow chicken to marinate longer, but don’t do for more than a quick overnight.
- Preheat BBQ to medium-low and oil grates.
- Sprinkle chicken breasts with 1/4 tsp kosher salt and 1/8 tsp ground black pepper.
- Grill chicken, about 4-6 mins on each side, until fully cooked.
