

French Toast Waffles w/ Bacon, Broccoli & Cheddar Egg Bites for dinner? Yes, please!
I love finding new things I can make w/ my Instant Pot! I get super crafty w/ the IP’s silicone egg bite mold/cover. From egg bites to cake bites, I’m a fan.
Bacon, Broccoli & Cheddar Egg Bites Recipe

Ingredients
- 6 large eggs
- 4 bacon slices, cooked and crumbled (see my Bacon Bits recipe)
- 1 cup broccoli florets, cut into bite-size pieces
- 1 cup water
- 1/2 cup shredded sharp Cheddar cheese
- 1/4 cup 2% milk
- 1/4 tsp ground black pepper
- 1/4 tsp sea salt
- extra virgin olive oil spray
Directions
- Add 6 large eggs, 1/2 cup shredded Cheddar cheese, 1/2 cup 2% milk, 1/4 tsp ground black pepper, and 1/4 tsp sea salt to a blender and blend until smooth.
- Lightly spray Instant Pot’s (IP) silicone egg mold and its cover with extra virgin olive oil.
- Sprinkle bacon bits, distributing evenly between the cups.
- Add broccoli florets, distributing evenly between the cups.
- Give a quick stir of the egg mixture then pour, distributing evenly, into the cups, but don’t fill them to the brim, then cover with mold’s lid.
- Add 1 cup of water to the inner pot of the IP.
- Place the filled and covered mold on top of the IP’s trivet, then transfer into inner pot.
- Secure lid, set to SEAL, then choose PRESSURE COOK (or MANUAL) for 8 mins.
- When the cooking cycle completes, allow for a 5 min natural release, then switch to VENTING to do a quick release (QR).
- When the pressure pin drops, remove the lid (facing away from you), and remove the egg bite mold from the IP.
- Allow mold to set to cool 7 mins.
- After cooling, uncover and carefully turn the mold upside down onto a plate – you can gently push out the egg bites if they don’t pop right out.
