Been craving Red Robin‘s Ensenada Chicken Platter for a while now… Even went there recently, but there was some kind of shortage and they didn’t have it.
Well, I’ve decided that I can often make things better at home any way now.
Still a bit scared of cooking meat on the stovetop, but this turned out perfectly. Maybe I’m figuring this cooking thing out…
Yup, this hit the spot! And the bonus was that my boys (who’d never had Red Robin’s version) really liked it, too.
Perfect served w/ a southwest salad mix w/ an avocado ranch dressing!!!
NOTE: To make this a Paleo or Whole30 recipe, skip the dressing and be sure your salsa is eating plan compliant.
Baja Norte Chicken Recipe
Ingredients
- 2 lbs thin-cut boneless, skinless chicken breasts
- 1 1/2 Tbsp chili powder
- 1 Tbsp ground cumin
- 1 Tbsp paprika
- 1/2 Tbsp extra virgin olive oil (EVOO)
- 1/2 Tbsp garlic powder
- 1/2 Tbsp onion powder
- 1/2 Tbsp dried oregano
- 1 tsp freshly ground sea salt
- Garnish to taste: Ranch dressing, lime wedges, salsa
Directions
- In a shallow plate, whisk together 1 1/2 Tbsp chili powder, 1 Tbsp cumin, 1 Tbsp paprika, 1/2 Tbsp garlic powder, 1/2 Tbsp onion powder, 1/2 Tbsp oregano, and 1 tsp salt until well blended.
- Pat 2 lbs chicken breasts dry with paper towels then press into spice blend, coating well on both sides of each breast (unlike my pic above where an end was missed!).
- In a large skillet, heat 1/2 Tbsp EVOO over medium heat on stovetop.
- Place 2 lbs seasoned chicken in skillet and cook on medium heat about 4 mins, then flip and cook about another 4 mins, until chicken is cooked through.
- Garnish with salsa, Ranch dressing, and lime wedges (all to taste).
