These Baked Cajun Fries turned out perfectly!
The attempt to get something similar to @raisingcanes sauce… not so much. Too much ketchup and not enough spice. But, it still gave a cool complement to the fries.
Baked Cajun Fries Recipe

Ingredients
- 2 large Russet potatoes
- 1 1/2 Tbsp extra virgin olive oil
- 1 1/2 Tbsp Cajun seasoning (see my Cajun Seasoning recipe)
Directions
- Wash and scrub 2 large Russet potatoes.
- Cut potatoes into about 1/4″ slices. Think “French fry” size. See top right pic above for suggested cutting steps.
- Immerse cut potatoes in a large bowl of cold water then move to refrigerator to soak for 1 hr.
- Line a an extra large baking sheet with parchment paper then set aside.
- About 55 mins into soaking potato slices, preheat oven to 350◦ F.
- Drain soaked potato slices, then transfer to a clean dish towel. Using a second dish towel, pat the drained potato slices as dry as you can get them.
- In a gallon-size Ziplock bag, toss patted dry potato slices in 1 1/2 Tbsp extra virgin olive oil and 1 1/2 Tbsp Cajun seasoning until well-coated.
- Spread seasoned potato slice on prepared baking sheet in one layer.
- Bake for 20 mins, then remove from oven and increase oven temp to 450◦ F.
- Shuffle fries around on baking sheet, again ensuring they’re in one layer before returning to oven.
- Bake for 25 more mins.
