So, usually when I make a full dessert recipe, it takes my family days to get through it. Not these… GONE in about 12 hours!

They’re basically little circular chocolate cakes w/ a semi-sweet glaze, but there’s always room for cake, right?!

This should get you a full dozen donuts as long as you don’t fill your rings more than 3/4 of the way.

Ingredients
  • 1 large egg
  • 1 cup all purpose flour
  • 1/2 cup confectioners sugar
  • 1/2 cup + 1/2 Tbsp heavy whipping cream, divided (1/2 cup for batter + 1/2 Tbsp for glaze)
  • 1/2 cup + 2 Tbsp nonfat milk, divided (1/2 cup for batter + 2 Tbsp for glaze)
  • 1/3 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 3 Tbsp unsalted butter, melted
  • 1 1/2 Tbsp unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp freshly ground sea salt
  • extra virgin olive oil (EVOO) spray
Directions
  1. Preheat oven to 350 F.
  2. Spray donut pan rings very lightly with EVOO.
  3. In a medium bowl, whisk together 1 cup flour, 1/3 cup granulated sugar, 1/4 cup cocoa powder, 1 tsp baking powder, 1/2 tsp baking soda, and 1/2 tsp salt until well blended. I use the whisk attachment on my stand mixer.
  4. In a large bowl, beat 1/2 cup milk, 1/2 cup cream, butter, vanilla, and egg until well blended. I use the beater attachment on my stand mixer.
  5. Add the dry mixture, about 1/3 at a time, to the wet mixture, beating together each time before adding more. Finally, beat until the resulting batter is smooth.
  6. Transfer the batter into a gallon-size Ziplock bag and cut off one of the bottom corners to create a piping bag.
  7. Pipe the batter into your rings in your donut pan, filling no more than 3/4 of the way up in each.
  8. Bake donuts for about 7 mins, until a toothpick inserted in the center of a donut ring comes out clean.
  9. After removing from the oven, allow to cool for about 10 mins before transferring donuts from pan to a cooling rack (positioned over a baking sheet).
  10. While donuts are cooling, make the glaze: In a small bowl, mix 1/2 cup confectioners sugar, 1 1/2 Tbsp cocoa powder, 2 Tbsp milk, and 1/2 Tbsp cream until smooth.
  11. Hand dip the donuts into the glaze and return to cooling rack to set for at least 20 mins.
