Ingredients
  • 3 lbs Russet potatoes (about 3 medium)
  • 1 1/2 Tbsp extra virgin olive oil
  • 3/4 Tbsp garlic powder
  • 3/4 Tbsp sea salt
  • 3/4 Tbsp onion powder
  • 3/4 Tbsp paprika
  • 3/4 tsp ground black pepper
Directions
  1. Wash and scrub 2 lbs Russet potatoes.
  2. Cut potatoes into about 1/4″ slices. Think “French fry” size.
  3. Immerse cut potatoes in a large bowl of cold water then move to refrigerator to soak for 1 hr.
  4. Line 2 extra large baking sheets with parchment paper then set aside.
  5. About 50 mins into soaking potato slices, preheat oven to 350◦ F.
  6. Drain soaked potato slices, then transfer to paper towels (or a clean dish towel). Using additional paper towels (or a second dish towel), pat the drained potato slices as dry as you can get them.
  7. To 2 gallon-size Ziploc bags, add patted dry potato slices (about 1/2 of potato slices per bag).
  8. In a small bowl, whisk together seasoning mixture: 1 1/2 Tbsp extra virgin olive oil, 3/4 Tbsp garlic powder, 3/4 Tbsp sea salt, 3/4 Tbsp onion powder, 3/4 Tbsp paprika, and 3/4 tsp ground black pepper.
  9. Pour 1/2 of seasoning mixture into each bag, seal bags, and toss each gently until potato slices are well-coated.
  10. Spread seasoned potato slices on prepared baking sheets in one layer.
  11. Bake for 20 mins, then remove from oven and increase oven temp to 450◦ F.
  12. Shuffle fries around on baking sheet, again ensuring they’re in one layer before returning to oven.
  13. Bake for 25 more mins.
