These were more delicious than I could have imagined!

I started with my Baked Turkey & Zucchini Meatballs recipe (see further below), smashed them, then topped with marinara and Mozzarella. SO good!

The kid and I *loved* them. My husband didn’t like them at all for some reason. 🤨

Served with green beans and a Caesar salad. Happy belly!

I’ve learned that topping extra lean ground turkey mixtures with a tomato-based sauce really locks the moisture and flavor in!

NOTE: To make meatballs instead of parmigiana, don’t smash, don’t top with Marinara and Mozzarella. Make 22 meatballs using a 2 Tbsp cookie scoop. Bake undisturbed for 24 mins.

Baked Turkey & Zucchini Parmigiana Recipe

Ingredients
  • 1 pound 99% extra lean ground turkey
  • 1 medium zucchini, julienned then chopped into 1″ strips (about 1 cup)
  • 1 egg
  • 1/2 cup Italian breadcrumbs (see my Italian Style Breadcrumbs recipe)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup Marinara
  • 1/2 cup Mozzarella cheese, shredded
  • extra virgin olive oil (EVOO) spray
Directions
  1. Preheat oven to 400â—¦ F.
  2. Line an extra large baking sheet with parchment paper.
  3. In a large bowl, mix together 1 pound 99% extra lean ground turkey, shredded 1 medium zucchini, 1 egg, 1/2 cup Italian Style Breadcrumbs, and 1/2 cup grated Parmesan cheese until well-combined.
  4. Make 3 Tbsp-sized meatballs and place on prepared baking sheet, evenly spaced. I use a 3-Tbsp cookie scoop and make 5 rows of 3 meatballs, leaving the room between.
  5. Smash meatballs into patties. I use a silicone cookie-size spatula sprayed frequently with EVOO spray for this.
  6. Bake for 19 mins, then temporarily remove from oven.
  7. Top each patty with Marinara and shredded Mozzarella, evenly divided.
  8. Return to oven and bake 5 mins more, until cheese is melted.
  9. Serve immediately.
