

These were more delicious than I could have imagined!
I started with my Baked Turkey & Zucchini Meatballs recipe (see further below), smashed them, then topped with marinara and Mozzarella. SO good!
The kid and I *loved* them. My husband didn’t like them at all for some reason.
Served with green beans and a Caesar salad. Happy belly!
I’ve learned that topping extra lean ground turkey mixtures with a tomato-based sauce really locks the moisture and flavor in!
NOTE: To make meatballs instead of parmigiana, don’t smash, don’t top with Marinara and Mozzarella. Make 22 meatballs using a 2 Tbsp cookie scoop. Bake undisturbed for 24 mins.
Baked Turkey & Zucchini Parmigiana Recipe

Ingredients
- 1 pound 99% extra lean ground turkey
- 1 medium zucchini, julienned then chopped into 1″ strips (about 1 cup)
- 1 egg
- 1/2 cup Italian breadcrumbs (see my Italian Style Breadcrumbs recipe)
- 1/2 cup grated Parmesan cheese
- 1/2 cup Marinara
- 1/2 cup Mozzarella cheese, shredded
- extra virgin olive oil (EVOO) spray
Directions
- Preheat oven to 400â—¦ F.
- Line an extra large baking sheet with parchment paper.
- In a large bowl, mix together 1 pound 99% extra lean ground turkey, shredded 1 medium zucchini, 1 egg, 1/2 cup Italian Style Breadcrumbs, and 1/2 cup grated Parmesan cheese until well-combined.
- Make 3 Tbsp-sized meatballs and place on prepared baking sheet, evenly spaced. I use a 3-Tbsp cookie scoop and make 5 rows of 3 meatballs, leaving the room between.
- Smash meatballs into patties. I use a silicone cookie-size spatula sprayed frequently with EVOO spray for this.
- Bake for 19 mins, then temporarily remove from oven.
- Top each patty with Marinara and shredded Mozzarella, evenly divided.
- Return to oven and bake 5 mins more, until cheese is melted.
- Serve immediately.
