Oh my… Yes!
Used to love ordering similar salads at places like BJ’s and Outback. So easy to make at home. And so, so de-licious!
I first served this one w/ my Maple Lemon Pepper Chicken.

- 1/2 head Iceberg lettuce, divided
- 4 Tbsp bleu cheese dressing, divided
- 4 slices bacon, crumbled into bits (see my Bacon Bits recipe), divided
- 1/2 cup balsamic vinegar
- 8 cherry tomatoes, halved
- 4 tsp reduced fat bleu cheese (crumbled), divided (optional)
- Red onion slivers, to taste (optional)
Directions
- Heat a small skillet over medium-low heat on stovetop.
- Add 1/2 cup balsamic vinegar and bring to a boil.
- Reduce heat and simmer, stirring often, until the vinegar reduces to about 1/4 cup.
- While vinegar is reducing, remove core from 1 head Iceberg lettuce. Cut head in half, then cut one half into half again.
- Plate lettuce wedges.
- Drizzle each wedge with 1/3 cup bleu cheese dressing.
- Place halves from 4 cherry tomatoes in a circle around each wedge.
- Lay red onion slivers over each wedge, if using.
- Drizzle each wedge and its tomatoes and onions (if using) with 1/3 cup balsamic glaze.
- Sprinkle each wedge with 2 tsp blue cheese crumbles (if using) and 2 slices bacon crumbled into bits.
