Balsamic Chicken & Red Potatoes

This one is delicious! The vinegar really tenderizes the chicken. And the potatoes will melt in your mouth!

Balsamic Chicken & Red Potatoes Recipe

Ingredients
  • 1 1/2 lb boneless, skinless chicken breasts
  • 16 oz baby red potatoes, quartered
  • 1/3 cup balsamic vinegar
  • 1/4 cup low sodium chicken broth
  • 2 Tbsp extra virgin olive oil
  • 2 tsp Nearly Italian Seasoning
  • 1 tsp pink Himalayan salt
  • 1/2 tsp ground black pepper
Directions
  1. Place in Instant Pot’s inner pot 1 1/2 lb boneless, skinless chicken breasts; 16 oz baby red potatoes, quartered; 1/3 cup balsamic vinegar; 1/4 cup low sodium chicken broth; 2 Tbsp extra virgin olive oil; 2 tsp Nearly Italian Seasoning; 1 tsp pink Himalayan salt; and 1/2 tsp ground black pepper.
  2. Gently stir to combine ensuring that all chicken is submerged.
  3. Seal lid and select PRESSURE COOK (or MANUAL) for 8 mins.
  4. Once cooking cycle completes, do a quick release.
  5. Transfer chicken to a cutting board and cut into bite-size pieces.
  6. Stir cut chicken back into potatoes and sauce.
  7. Plate (we use pasta bowls!) and drizzle sauce over chicken and potatoes before serving.
