This one is delicious! The vinegar really tenderizes the chicken. And the potatoes will melt in your mouth!

Balsamic Chicken & Red Potatoes Recipe
Ingredients
- 1 1/2 lb boneless, skinless chicken breasts
- 16 oz baby red potatoes, quartered
- 1/3 cup balsamic vinegar
- 1/4 cup chicken stock
- 2 Tbsp extra virgin olive oil
- 2 tsp Nearly Italian Seasoning
- 1 tsp pink Himalayan salt
- 1/2 tsp ground black pepper
Directions
- Place in Instant Pot’s inner pot 1 1/2 lb boneless, skinless chicken breasts; 16 oz baby red potatoes, quartered; 1/3 cup balsamic vinegar; 1/4 cup chicken stock; 2 Tbsp extra virgin olive oil; 2 tsp Nearly Italian Seasoning; 1 tsp pink Himalayan salt; and 1/2 tsp ground black pepper.
- Gently stir to combine ensuring that all chicken is submerged.
- Seal lid and select PRESSURE COOK (or MANUAL) for 8 mins.
- Once cooking cycle completes, do a quick release.
- Transfer chicken to a cutting board and cut into bite-size pieces.
- Stir cut chicken back into potatoes and sauce.
- Plate (we use pasta bowls!) and drizzle sauce over chicken and potatoes before serving.
