Basic Chaffles

Hubby wanted to BBQ again tonight, so I *ordered* one of his homemade basil & sweet onion burgers.

I’ve been making chaffles as burger buns, but they’re so *crispy* that they sometimes chafe my gums (already sensitive as I’ve got braces moving my teeth around right now). So… I did some research to try to figure out how to make a softer chaffle that would still hold together.

I eventually gave up on *finding* the perfect recipe and I crafted a new recipe of my own. It was a perfect base chaffle, soft and mild in flavor that held together even better than my other basic chaffle recipe I’d been following. I’ll be using this for sandwiches moving forward, too – not for sweet chaffles tho, that’s another recipe!

Additional seasonings such as minced onion, garlic powder, or herbs could easily be added in small quantities (less than 1/4 tsp total for sure) to make these more savory. I didn’t add anything this time as my burger patty already had all the flavor I was looking for.

Makes 3 chaffles in a Dash Mini Waffle Maker, depending on how precise you are with equally dividing the batter. I didn’t measure my division of my batter in my first batch so the picture is one of my smaller ones because the two perfect ones went on my burger and right into my belly!

I use a hand blender for this one as my stand mixer doesn’t do too well with really small batches.

Basic Chaffles Recipe

Ingredients
  • 1 large egg
  • 1/4 cup cream cheese
  • 1/4 cup freshly shredded mozzarella cheese
  • 2 Tbsp almond flour
  • 1/4 tsp baking powder
  • Extra virgin olive oil (EVOO) spray
Directions
  1. Turn on your mini waffle maker and use EVOO spray to very lightly oil the top and bottom grill plates.
  2. In a medium bowl beat 1 egg.
  3. Add 1/4 cup cream cheese and mix.
  4. Add 2 Tbsp almond flour and 1/4 tsp baking powder and mix well.
  5. Add 1/4 cup shredded mozzarella and combine.
  6. Pour just under 1/4 cup of batter into the heated mini waffle maker.
  7. Close waffle maker and cook for 4 mins.
  8. Remove chaffle to cool for desired length of time on wire rack.
  9. Repeat steps 6 – 8 for each chaffle. Do not add EVOO to the grill plates after the first time unless you really need it.
