There’s a joke in my house that this is my kid’s favorite food ever. And tonight he decided saying that really wasn’t much of an exaggeration for him.
Not long ago I finally learned how to make eggs over easy and over medium. TIP: for over medium, try making over easy and just take too long before flipping them. Really came in handy tonight.
Can’t go wrong w/ thick-cut bacon, fried egg, Swiss cheese, and smashed avocado on grilled sourdough!
BECAS Sandwich Recipe
Ingredients
- 2 eggs
- 2 slices bacon
- 2 slices Sourdough loaf
- 2 slices Swiss cheese
- 1 avocado
- 2 tsp butter (softened), divided
Directions
- Heat a small skillet over medium-high heat on stovetop.
- Add 2 bacon slices and cook to desired crispness then set aside to drain on paper towels. Don’t wash that skillet yet – you’re going to be using it in a bit!
- Using 1/2 tsp butter for each, butter the outside of each slice of bread, cut each slice in half, then set aside.
- In a small bowl, mash avocado then set aside.
- Heat griddle on medium-high (about 375° F).
- Place 4 halves buttered slices Sourdough loaf, butter-side down, on griddle.
- Top 2 of the half slices with a slice of Swiss cheese.
- Cook the slices until bottoms of half slices are golden brown.
- Plate individually with one cheese-topped slice and one regular per plate.
- In the bacon skillet, fry 2 eggs.
- Layer on top of each cheese-topped slice, in order: 1 slice bacon (broken in half) then 1 fried egg.
- For each sandwich, spread 1/2 of mashed avocado on the regular slice, then place that slice (avocado side down) on top of the fried egg.
