μπριάμι (Briami) [Greek Roasted Vegetables] Recipe

Ingredients
  • 1/2 green bell pepper, cut into slices
  • 1/2 red bell pepper, cut into slices
  • 1/2 eggplant, cut into 2″ pieces
  • 2 gold potatoes, cut into 2″ pieces
  • 1 yellow onion, cut into quarters
  • 2 medium zucchini, cut into 1/2″ slices
  • 1 Tbsp minced garlic
  • 2 Tbsp dry mint
  • 2 Tbsp dried oregano
  • 1 1/2 Tbsp dried parsley
  • 2 Tbsp tomato paste
  • 1/3 cup + 1 Tbsp water (divided)
  • 1/4 cup extra virgin olive oil
  • 1 tsp sea salt (divided)
  • 1 tsp ground black pepper (divided)
Directions
  1. Preheat oven to 400 F.
  2. To a very large bowl, add sliced 1/2 green bell pepper, sliced 1/2 red bell pepper, 2″ pieces of 1/2 eggplant, 2″ pieces of 2 gold potatoes, quartered 1 yellow onion, and 1/2″ slices of 2 medium zucchini.
  3. Add 1 Tbsp minced garlic, 2 Tbsp dry mint, 2 Tbsp dried oregano, and 1 1/2 Tbsp dried parsley – then stir gently with rubber spatula until well-combined.
  4. In a small bowl, whisk together 2 Tbsp tomato paste and 1 Tbsp water – then add to vegetable mixture and stir gently with rubber spatula until well-combined.
  5. Add 1/4 cup extra virgin olive oil to vegetable mixture and stir gently with rubber spatula until well-combined.
  6. Transfer vegetable mixture to 2 extra large baking trays (unlined) and space evenly in 1 layer.
  7. Sprinkle each tray evenly with 1/2 tsp sea salt and 1/2 tsp ground black pepper.
  8. To each tray, pour in a corner of the pan 1/3 cup of water – then tilt the tray so that it spreads.
  9. Cover trays with aluminum foil and bake 30 mins.
  10. After 30 mins, uncover and continue to bake for 30 more mins.
  11. When baking is complete, remove from oven and allow to cool 5 mins before serving.
