Broke down and made hubby try it. 😋

So fluffy and delicious! I thought it had just the right amount of richness. Kid thought it was really good (except the edges – he wasn’t a fan of the firmer egg parts). Hubby is still not a fan. 🤔 So now I make this to share with my parents instead!

I used my stand mixer to whisk the eggs then added the cream and whisked together.

I baked mine about 32 mins – just ’til butter knife (an inch from the edge) came out *wet* but clean. But, everyone’s oven is different, so I recommend watching closely from about the 30-min mark.

This can also be made with a cheddar cheese of your choice. I’ve successfully made this in an 8″ x 8″ glass baking dish, too.

Served with cornbread (w/ butter & honey) and dinner salad, makes me feel like we’re at Marie Callender’s!

Broccoli & Ham Crustless Quiche Recipe

Ingredients
  • 6 large eggs
  • 2 cups broccoli florets, cut into bite-size pieces
  • 1 cup cooked ham, diced
  • 1 cup freshly shredded Swiss cheese
  • 1 cup heavy whipping cream
  • 1/2 cup yellow onion, chopped
  • 1 Tbsp unsalted butter
  • extra virgin olive oil (EVOO) spray
Directions
  1. Preheat oven to 400â—¦ F – be sure to place the oven rack in the center position.
  2. Very lightly spray a 9″ round ceramic pie dish with EVOO.
  3. Melt 1 Tbsp butter over medium heat in a medium skillet on stovetop (or in inner pot of Instant Pot on Sauté – Normal function).
  4. Add chopped 1/2 cup yellow onion and sauté for 3 mins, until softening.
  5. Add diced cooked 1 cup ham and continue to sauté for 4 mins, until onions are soft.
  6. Place 2 cups bite-size broccoli florets in pie dish, spreading out evenly.
  7. Add ham mixture on top of that, as evenly spaced as you can.
  8. Sprinkle evenly w/ shredded Swiss cheese.
  9. In a medium bowl, whisk together 6 eggs and 1 cup cream, then pour egg mixture evenly over ingredients in pie dish – resist the temptation to do any stirring!
  10. Bake 30-35 mins until the eggs are set and a knife inserted in center comes out moist but clean.
  11. Let stand 15 mins before serving. If you’ll be serving later than this, cover and refrigerate. Can be served warm or cold!
