Broccoli, Scallion & Cheddar Egg Cups

I’ve spent a good portion of this AM in the kitchen as I wanted to get some meal prepping in.

These are SO good and easy to both fridge or freeze for later in the week. My kid loves them, too.

NOTE: When I originally crafted this recipe I included 1/2 tsp of pink Himalayan salt, which was added in Step 7. I found that the cheese added enough salt for my taste so I removed it. However, I wanted to note this in case you are more of a salt-lover and want to add some of the 1/2 tsp back in.

Broccoli, Scallion & Cheddar Egg Cups Recipe

Ingredients
  • 8 large eggs
  • 4 scallions (green parts only), diced
  • 2 cups broccoli florets, diced
  • 1 cup shredded sharp Cheddar cheese
  • 1 Tbsp extra virgin olive oil (EVOO)
  • 1/2 cup fat free milk
  • 1/2 tsp ground black pepper
Directions
  1. Preheat oven to 325 F.
  2. Insert 12 muffin papers into a 12-cup baking pan.
  3. Heat a large skillet over medium heat on stovetop.
  4. Add 1 Tbsp EVOO and heat.
  5. Add 2 cups diced broccoli florets and 4 scallions (diced green parts) and sauté 5 mins, until soft.
  6. Remove from heat and allow to cool 5 mins.
  7. In a large bowl, whisk together 8 eggs, 1 cup shredded sharp Cheddar cheese, 1/2 cup fat free milk, and 1/2 tsp ground black pepper.
  8. Stir in veggie mixture.
  9. Pour egg mixture equally into muffin papers.
  10. Bake 25 – 30 mins, until firm to the touch.
  11. Remove from oven and allow to cool in pan 5 mins before removing from pan.
  12. To store in fridge or freezer, wrap (or Ziplock bag) individually once fully cooled.
