This was bomb! My husband finished his plate almost before I could ask if he liked it.
This fish could definitely stand on its own but the lemon dill sauce really complements the Cajun seasoning.
Hubby isn’t such a fan of lemon but liked the sauce the way I made it.
TIPS:
Make this recipe with Tilapia… Just choose 4 (4 oz) filets and bake at 350◦ for about 20 mins.
Make this recipe with Orange Roughy… Just choose 2 (7 oz) filets and bake, covered with aluminum foil, at 400◦ for about 23 mins.
NOTE: You can use regular mayo instead vegan spread. I just don’t like mayo…
Cajun Salmon with Lemon Dill Sauce Recipe
Ingredients
- 3 (5 oz) salmon filets
- 1 lemon, thinly sliced
- 4 Tbsp sour cream
- 2 Tbsp Best Foods Vegan Dressing & Spread
- 2 Tbsp fresh lemon juice
- 1 Tbsp Cajun seasoning (see my Cajun Seasoning recipe)
- 2 tsp dried dill
- 1/4 tsp freshly ground sea salt
- 1/8 tsp freshly ground black pepper
- 1 pinch garlic powder
- extra virgin olive oil (EVOO) spray
Directions
- Preheat the oven to 425◦ F.
- Lightly spray a 9″ x 13″ baking dish with EVOO.
- Combine 1 Tbsp Cajun seasoning, 1/4 tsp salt, and 1/8 tsp black pepper in a ramekin.
- Season filets w/ seasoning blend then place in baking dish.
- Top filets with lemon slices (see pic above).
- Bake for 20-30 mins, until salmon is flakey.
- While salmon is baking, make the sauce: In a small bowl, mix together 4 Tbsp sour cream, 2 Tbsp vegan spread, 2 Tbsp lemon juice, 2 tsp dill, and 1 pinch (about 1/16 tsp) garlic powder.
- When salmon is done cooking, remove lemon slices and plate the salmon, topping with sauce.
