Cajun Shrimp Caesar Salad

So good!!! A keeper in our rotation as all three of us really enjoyed it.

This Cajun seasoning is bomb! Hubby is already planning other meals in which he can use it.

It was my first time making shrimp as my husband has typically done it and I’ve only maybe helped out before.

Pro Tip: The smaller the shrimp you use, the less flipping in the pan will be needed. why is this important? Shrimp cook really fast – even when you take them off the heat. I typically get as close in size as I can to small 71-90 ct 1 lb bag. Then I can just stir the shrimp around instead of *flipping*.

I’ve also tried with larger shrimp: medium shrimp (41-50 ct per lb) and they were great (and just as easy to cook)!

I never knew there was a whole art to dicing tomatoes so that you don’t end up w/ all the *mush*. 🍅 See a helpful link in the directions!

This is also one of my kid’s faves!!!

NOTE: To make this a Paleo or Whole30 recipe, just leave out the parmesan.

Cajun Shrimp Caesar Salad Recipe

Ingredients
  • 1/2 cup Caesar dressing
  • 1 lb shrimp (peeled, deveined, and patted dry)
  • 1 tbsp Cajun seasoning (see my Cajun Seasoning recipe)
  • 2 tbsp extra virgin olive oil (EVOO)
  • 1 head romaine lettuce
  • 2 Roma tomatoes
  • 1 1/2 oz shaved parmesan cheese
Directions
  1. Chop romaine and dice tomatoes.
  2. In a gallon-size Ziplock bag, toss 1 lb shrimp with 1 Tbsp Cajun seasoning to coat evenly.
  3. Heat 2 Tbsp EVOO in a large skillet over medium-high heat on stovetop.
  4. Add the shrimp in a single layer and sear for 1 minute, until they begin to pink.
  5. Flip shrimp and sear another 1-2 minutes, until cooked through.
  6. In a large bowl, toss 1 head chopped romaine with 1/2 cup dressing, diced tomatoes, and 1 1/2 oz shaved parmesan.
  7. Divide among plates or bowls then top each serving with Cajun shrimp.
