Camarones Cubanos in 3… 2… YUM! 🦐🍊🍋‍🟩🔥

For someone who only ate shrimp maybe a handful of times in life before the last couple of years, I eat a lot of it now – typically at least weekly these days.

And, I don’t think we’ve created a shrimp dish I don’t like. But, this… THIS elevated our shrimp to a whole other level! 💫

🦐 Marinated, sauteed, then marinade reduced to become the shrimp dip upon serving. Served with black beans. 🫘 So much yum! 😋

Camarones Cubanos (Cuban Shrimp) Recipe

Ingredients
  • 1 lb large shrimp, peeled | deveined | tail off
  • 3 limes, zested and juiced
  • 1 orange, zested and juiced
  • 6 Tbsp extra virgin olive oil (divided)
  • 2 Tbsp minced garlic
  • 1 tsp dried oregano
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp ground cumin
Directions
  1. In a large glass or ceramic bowl, whisk together 1/4 cup extra virgin olive oil, zest and juice from 3 limes, zest and juice from 1 orange, 2 Tbsp minced garlic, 1 tsp dried oregano, 1/2 tsp kosher salt, 1/2 tsp ground black pepper, and 1/4 tsp ground cumin together in a glass or ceramic bowl.
  2. Place 1 lb peeled and deveined large shrimp into marinade and toss to evenly coat.
  3. Cover bowl with cling wrap and marinate in the fridge for 15 mins.
  4. Heat 2 Tbsp extra virgin olive oil in a large skillet over medium heat.
  5. Transfer marinated shrimp to heated skilled, allowing excess marinade to drip off into marinade bowl, and reserving remaining marinade.
  6. Cook shrimp until bright pink and opaque – this took us almost 9 mins.
  7. Transfer cooked shrimp to a plate.
  8. Pour reserved marinade into still heating skillet then turn to medium-low heat.
  9. Simmer until sauce slightly thickens, about 5 mins.
  10. Serve sauce in dipping bowls alongside plated shrimp.

NOTE: Nutrition Facts below assume all dipping sauce is eaten (which isn’t typically the case in our house, but I didn’t decrease as I don’t know how much of it you’ll consume).
