I’ve tried this basic recipe with lots of toppings: mashed cauliflower (made at home), tater tots, mashed potatoes (store-bought), and finally mashed carrots (made in IP). For a combination of taste and health benefits, I’ve settle on mashed carrots. Simply replace the carrots with your topping of choice if you’d make a different decision.
I’ve also lightened the fat up on this one by using extra lean ground turkey depending on my eating plan for that day… You could also leave out the honey as cooked carrots are kinda sweet anyway. But, this recipe is posted the way I like it. Feel free to tweak it to your preferences!
Carrot Mash Shepherd’s Pie Recipe
Ingredients
- 1 1/2 lb carrots, sliced
- 1 lb extra lean ground beef
- 1 small zucchini, diced
- 1 small yellow onion, diced
- 1 cup crushed tomatoes
- 1/4 cup water
- 2 Tbsp butter, melted
- 1 Tbsp honey
- 1 Tbsp extra virgin olive oil (EVOO)
- 2 tsp minced garlic
- 1/4 tsp ground black pepper
Directions
- Heat a large saucepan over medium heat on stovetop.
- Add 1 Tbsp EVOO and heat.
- Add diced 1 small yellow onion and sauté, until soft and almost translucent.
- Add 2 tsp minced garlic and continue to sauté for 30 secs to 1 min until onions are translucent and garlic is fragrant.
- Add 1/4 tsp ground black pepper and 1 lb extra lean ground beef, then cook – breaking beef into small pieces, until browned and fully cooked.
- While beef is browning, pour 1/4 cup water into Instant Pot’s (IP) inner pot.
- Add carrots.
- Close lid and select HIGH PRESSURE (or MANUAL) for 8 mins.
- Stir into browned beef mixture: diced 1 small zucchini and 1 cup crushed tomatoes, until well-combined.
- Reduce heat and simmer for about 10 mins.
- Preheat oven to 350â—¦ F.
- When IP’s cooking cycle completes, do a quick release.
- Add 1 Tbsp honey and 2 Tbsp melted butter to carrots then mash it all together until smooth.
- Place beef mixture into a large casserole dish. I’ve used all kinds of sizes, but tend to choose wide and deep over a 9″ x 13″.
- Top with the mashed carrots.
- Bake for 20-25 minutes, until filling is bubbling.
- Remove from oven and allow to cool for a few mins before serving.
