This was one of my greatest successes yet! Wanted to recreate Mimi’s Cafe‘s Carrot Raisin Nut Loaf (without the nuts) and ended up with an even better version (IMO).
I was in a big hurry to get my kid fed and off to his Little Shop of Horrors production (in which he is playing Mr. Mushnik, the flower shop owner – his biggest role yet!) so actually neglected to take an after picture the first time. And, of course, this deliciousness was GONE by the time I realized.
More dense and less sweet than carrot cake… It is meant to be eaten during the meal, but it’s good enough to be the meal. Or a snack between the meals. Or the appetizer before your meal. Pretty much anytime… Like for breakfast. Or dessert. You get the point… Yup!
TIPS: Many folks like to add nuts to their baked goods. I’m NOT one of them. If you like ’em, you can throw about 1/2 cup of them in when you stir in the other *additions*. I think the original adds walnuts… To make this a healthier bread, sub out the vegetable oil for coconut oil.
Carrot Raisin Bread Recipe
Ingredients
- 3 eggs
- 1 1/2 cups all purpose flour
- 1 1/2 cups brown sugar, packed
- 1 cup grated carrot
- 1 cup vegetable oil
- 1/2 cup canned crushed pineapple in juice, drained
- 1/2 cup raisins
- 2 tsp baking powder
- 2 tsp cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- extra virgin olive oil (EVOO) spray
Directions
- Preheat oven to 350◦ F.
- Lightly spray a 9 1/2″ round glass baking dish with EVOO then set aside.
- Sift together 1 1/2 cups flour, 2 tsp baking powder, 2 tsp cinnamon, 1 tsp baking soda, and 1/2 tsp salt into a medium bowl.
- In a large bowl, whisk together 3 eggs, 1 1/2 cups brown sugar, and 1 cup oil.
- Slowly add the dry mixture into the liquid mixture, blending well before you add more, until well mixed.
- Gently stir in 1 cup carrots, 1/2 cup pineapple, and 1/2 cup raisins.
- Pour batter into prepared dish.
- Bake for about 50 minutes, until a toothpick inserted in center comes out moist, but clean.
