Carrot Raisin Bread

This was one of my greatest successes yet! Wanted to recreate Mimi’s Cafe‘s Carrot Raisin Nut Loaf (without the nuts) and ended up with an even better version (IMO).

I was in a big hurry to get my kid fed and off to his Little Shop of Horrors production (in which he is playing Mr. Mushnik, the flower shop owner – his biggest role yet!) so actually neglected to take an after picture the first time. And, of course, this deliciousness was GONE by the time I realized.

More dense and less sweet than carrot cake… It is meant to be eaten during the meal, but it’s good enough to be the meal. Or a snack between the meals. Or the appetizer before your meal. Pretty much anytime… Like for breakfast. Or dessert. You get the point… Yup!

TIPS: Many folks like to add nuts to their baked goods. I’m NOT one of them. If you like ’em, you can throw about 1/2 cup of them in when you stir in the other *additions*. I think the original adds walnuts… To make this a healthier bread, sub out the vegetable oil for coconut oil.

Carrot Raisin Bread Recipe

Ingredients
  • 3 eggs
  • 1 1/2 cups all purpose flour
  • 1 1/2 cups brown sugar, packed
  • 1 cup grated carrot
  • 1 cup vegetable oil
  • 1/2 cup canned crushed pineapple in juice, drained
  • 1/2 cup raisins
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp salt
  • extra virgin olive oil (EVOO) spray
Directions
  1. Preheat oven to 350 F.
  2. Lightly spray a 9 1/2″ round glass baking dish with EVOO then set aside.
  3. Sift together 1 1/2 cups flour, 2 tsp baking powder, 2 tsp cinnamon, 1 tsp baking soda, and 1/2 tsp salt into a medium bowl.
  4. In a large bowl, whisk together 3 eggs, 1 1/2 cups brown sugar, and 1 cup oil.
  5. Slowly add the dry mixture into the liquid mixture, blending well before you add more, until well mixed.
  6. Gently stir in 1 cup carrots, 1/2 cup pineapple, and 1/2 cup raisins.
  7. Pour batter into prepared dish.
  8. Bake for about 50 minutes, until a toothpick inserted in center comes out moist, but clean.
