Chicken Fritters Recipe

Ingredients
  • 2 lb boneless skinless chicken breast, diced into 1/4-inch pieces
  • 1 cup shredded Mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup all-purpose flour
  • 3 tsp dried chives
  • 2 large eggs
  • 1/2 tsp garlic powder
  • 1/4 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1/4 cup extra virgin olive oil (EVOO)
Directions
  1. In a large bowl, combine the 1/4″ diced 2 lb boneless skinless chicken breast, 1 cup shredded Mozzarella cheese, 1/4 cup grated Parmesan cheese, 1/4 cup all-purpose flour, 3 tsp dried chives, 2 large eggs, 1/2 tsp garlic powder, 1/4 tsp kosher salt, and 1/4 tsp ground black pepper until well-combined.
  2. Cover bowl with plastic wrap and refrigerate for at least 1 hr and no more than 24 hr. I’ve done as little as 35 mins in a pinch, but the flavors really come together after an hour or more.
  3. Heat a large skillet over medium heat on stovetop.
  4. Add 2 Tbsp EVOO and heat.
  5. Add fritter batter – 1/4 cup at a time – 4xs, using a spatula to flatten each 1/4-cup scoop.
  6. Fry about 4 mins per side, until fully cooked and golden brown.
  7. Transfer 4 cooked fritters to a paper towel lined plate to drain.
  8. Repeat Steps 5-7.
  9. Add 1 Tbsp EVOO to heated skillet.
  10. Repeat Steps 5-7.
  11. Add fritter batter – 1/4 cup at a time – 3xs, using a spatula to flatten each 1/4-cup scoop.
  12. Fry about 4 mins per side, until fully cooked and golden brown.
  13. Transfer 3 cooked fritters to a paper towel lined plate to drain.
  14. Add remaining 1 Tbsp EVOO to heated skillet.
  15. Repeat Steps 11-13.
