

The end result is delicious. I don’t usually get seconds but I had almost 2 full servings!
Chicken Fritters Recipe

Ingredients
- 2 lb boneless skinless chicken breast, diced into 1/4-inch pieces
- 1 cup shredded Mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup all-purpose flour
- 3 tsp dried chives
- 2 large eggs
- 1/2 tsp garlic powder
- 1/4 tsp kosher salt
- 1/4 tsp ground black pepper
- 1/4 cup extra virgin olive oil (EVOO)
Directions
- In a large bowl, combine the 1/4″ diced 2 lb boneless skinless chicken breast, 1 cup shredded Mozzarella cheese, 1/4 cup grated Parmesan cheese, 1/4 cup all-purpose flour, 3 tsp dried chives, 2 large eggs, 1/2 tsp garlic powder, 1/4 tsp kosher salt, and 1/4 tsp ground black pepper until well-combined.
- Cover bowl with plastic wrap and refrigerate for at least 1 hr and no more than 24 hr. I’ve done as little as 35 mins in a pinch, but the flavors really come together after an hour or more.
- Heat a large skillet over medium heat on stovetop.
- Add 2 Tbsp EVOO and heat.
- Add fritter batter – 1/4 cup at a time – 4xs, using a spatula to flatten each 1/4-cup scoop.
- Fry about 4 mins per side, until fully cooked and golden brown.
- Transfer 4 cooked fritters to a paper towel lined plate to drain.
- Repeat Steps 5-7.
- Add 1 Tbsp EVOO to heated skillet.
- Repeat Steps 5-7.
- Add fritter batter – 1/4 cup at a time – 3xs, using a spatula to flatten each 1/4-cup scoop.
- Fry about 4 mins per side, until fully cooked and golden brown.
- Transfer 3 cooked fritters to a paper towel lined plate to drain.
- Add remaining 1 Tbsp EVOO to heated skillet.
- Repeat Steps 11-13.
