After yesterday’s debacles (which also included undercooked hardboiled eggs I learned about this AM. – see that egg recipe perfected here!), this meal made up for it all.
Oh my goodness, SO delicious all around. Nothing I would change…

Chicken Parmesan Recipe
Ingredients
- 1 1/2 lbs thin-cut boneless, skinless chicken breasts
- 1 1/2 cups mozzarella cheese, freshly shredded
- 1 cup no sugar added / low sodium tomato sauce
- 3/4 cup grated parmesan cheese
- 1/2 cup pork rind, finely crushed
- 1 Tbsp extra virgin olive oil (EVOO) + EVOO spray for greasing baking dish
- 1 tsp garlic powder
- 1 tsp Italian seasoning (see my Nearly Italian Seasoning recipe)
- 1/2 tsp crushed red pepper
- 1/4 tsp freshly ground black pepper
Directions
- In a Ziplock-style gallon storage bag, marinate 1 1/2 lbs chicken breasts with 1 Tbsp EVOO, 1 tsp garlic powder, 1/4 tsp black pepper, 1 tsp Nearly Italian seasoning, and 1/2 tsp red pepper for at least 15 mins.
- Preheat the oven to 400â—¦ F.
- Lightly spray a 9″ x 13″ baking dish with EVOO.
- Place marinated chicken in baking dish and pour 1 cup tomato sauce over it – as evenly as possible.
- Sprinkle with 3/4 cup grated Parmesan cheese and 1 1/2 cups shredded Mozzarella cheese.
- Sprinkle 1/2 cup crushed pork rinds over the top.
- Bake for 30 mins, or until chicken is cooked through (a meat thermometer inserted into the thickest center of a breast will read at least 165â—¦ F) and cheese is melted and bubbly.
