Chicken Piccata

Third time trying this one and think I’ve finally got it just right. 😋

I’ve served with long grain wild rice and Brussels sprouts or chicken broccoli rice.

I was so excited to eat that I took my first pic without drizzling the sauce over the chicken!

Super yummy!!!

NOTE: Traditionally, Chicken Piccata has capers, but we skip as the kid and I are not fans. If you want them in yours, consider adding up to 2 Tbsp drained brined capers to your butter sauce before pouring over chicken.

TIPS: Ensure your cooked chicken has reached 165° or continue in 2-minute increments until it reaches that.

Chicken Piccata Recipe

Ingredients
  • 1 1/2 lbs thin-cut boneless, skinless chicken breasts (trimmed)
  • 1 Lemon, sliced
  • 1 cup chicken broth
  • 1/4 cup lemon juice
  • 2 Tbsp unsalted butter
  • 2 Tbsp fresh flat leaf parsley, chopped
  • 1 Tbsp extra virgin olive oil
  • 1/2 tsp pink Himalayan salt
  • 1/4 tsp ground black pepper
Directions
  1. Season 1 1/2 lbs trimmed thin-cut boneless, skinless chicken on both sides with 1/2 tsp pink Himalayan salt and 1/4 tsp ground black pepper.
  2. Select SAUTÉ – NORMAL on Instant Pot (IP).
  3. Add 1 Tbsp extra virgin olive oil to inner pot.
  4. Add seasoned chicken and brown – about 2 mins per side then set aside on a plate.
  5. Add 1 cup chicken broth and deglaze pot.
  6. Press CANCEL.
  7. Return seared chicken to IP and nestle chicken into broth.
  8. Secure the lid, setting to SEAL.
  9. Select PRESSURE COOK (or MANUAL) and select 5 mins.
  10. When cooking cycle is complete, allow a natural release (NR) for 5 mins, then do a quick release (QR) – then press CANCEL.
  11. Transfer cooked chicken to a serving platter, cover, and keep warm. Mine always goes into either the microwave or oven until I’m ready for it again.
  12. Add 1/4 cup lemon juice to cooked juices in inner pot.
  13. Select SAUTÉ – NORMAL.
  14. Simmer for about 5 mins until reduced to desired consistency.
  15. Press CANCEL.
  16. Whisk 2 Tbsp unsalted butter into lemon sauce.
  17. Plate chicken then pour sauce over chicken and garnish evenly with 2 Tbsp dired parsley and lemon slices from 1 lemon.
