

I warned y’all. I’m mesmerized by these Garlic & Cinnamon Sugar Sweet Potatoes…
Was ready for a new lunch in my rotation, so today I crafted this tasty salad: fresh spinach, seasoned and sautéed chicken (you’d never know from the taste that it came from a can!), and a small serving of my newest sweet potatoes recipe here, tossed in a balsamic vinaigrette.
Oh. Yum. Just a little warm and oh so fresh for a cool day.
This was just supposed to be something tossed together to hit my macros, but it’s so good that I’m pretty sure I’m going to add it to the website for future makings in my kitchen.
Chicken & Sweet Potato Balsamic Spinach Salad Recipe

Ingredients
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/8 tsp ground black pepper
- 1/8 tsp smoked paprika
- 1 tsp extra virgin olive oil
- 4 oz canned chicken, drained
- 75 g fresh baby spinach
- 2 Tbsp balsamic vinaigrette
- 113 g Garlic & Cinnamon Sugar Roasted Sweet Potatoes
Directions
- In a small ramekin, combine 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/8 tsp ground black pepper, and 1/8 tsp smoked paprika.
- Heat a small skillet over medium heat on stovetop.
- Add 1 tsp extra virgin olive oil and heat.
- Add drained 4 oz canned chicken and ramekin seasonings and sauté 2-3 mins until heated through – then remove from heat.
- To a large lidded bowl, add 75 g fresh baby spinach and 2 Tbsp balsamic vinaigrette then gently toss until spinach is all coated in some dressing.
- Add cooked chicken and 113 g Garlic & Cinnamon Sugar Roasted Sweet Potatoes. If desired, gently stir to combine.
