Chicken Tikka Masala

This. is. good.

My fave South Asian dish to date. Never had it fresh before this, tho. Wow! What a difference!

For my carb-needing boys, I make sure to make some long grain white rice to serve under this.

TIP: To make this a Whole30 recipe, use ghee instead of butter.

Chicken Tikka Masala Recipe

Ingredients
  • 2 lbs boneless, skinless chicken breast
  • 1 (15 oz) can diced tomatoes (DO NOT DRAIN)
  • 1 small yellow onion, chopped
  • 1 yellow bell pepper, chopped
  • 1/2 cup full-fat coconut milk
  • 2 Tbsp butter
  • 3 tsp minced garlic
  • 2 tsp garam masala (see my Garam Masala recipe)
  • 1 1/2 tsp freshly ground sea salt
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1/3 tsp ground ginger
  • 1/4 tsp cayenne pepper
Directions
  1. Set Instant Pot to SAUTÉ – NORMAL and allow to heat for at least 30 secs.
  2. Add 2 Tbsp butter to inner pot and melt.
  3. Add chopped 1 yellow onion and chopped 1 yellow bell pepper, then sauté until veggies begin to soften.
  4. Add 3 tsp minced garlic, 2 tsp Garam Masala seasoning, 1 1/2 tsp salt, 1 tsp coriander, 1 tsp cumin, 1 tsp turmeric, 1/4 tsp cayenne, and 1/3 tsp ginger then continue to sauté for 1 min.
  5. Add 1 – 15 oz can of undrained diced tomatoes and 1/2 cup coconut milk, stirring well to combine – then select CANCEL.
  6. Place 2 lbs chicken breasts on top of mixture, spooning just a bit of the sauce over the chicken.
  7. Close the lid and set to SEAL.
  8. Cook on PRESSURE COOK (or MANUAL) for 15 mins.
  9. When cooking cycle completes, do a quick release.
  10. Transfer chicken to a large bowl and shred using 2 forks.
  11. Purée the sauce in the inner pot using an immersion blender.
  12. Place shredded chicken back into sauce and stir to combine.
