I like to use granola to top Fage 0% yogurt for a dietician-approved snack (or dessert).

This makes a LARGE batch of granola b/c we LOVE it all kinds of ways for breakfast, snacks, and dessert! It should be stored in an airtight container in the fridge for up to 2 weeks, or you can cut the recipe in half or more.

TIP: Make it your own by adding in dried fruit, chopped nuts, shredded coconut, or sweet chips (e.g., chocolate, toffee).

Cinnamon, PB & Honey Granola Recipe

Ingredients
  • 2/3 cup creamy peanut butter
  • 2/3 cup honey
  • 2 tsp pure vanilla extract
  • 1 tsp ground cinnamon
  • 5 cups old-fashioned oats
Directions
  1. Preheat oven to 300 F.
  2. Line an extra large baking sheet with parchment paper, then set aside.
  3. In a large bowl, combine 2/3 cup creamy peanut butter and 2/3 cup honey, until well-combined.
  4. Add 2 tsp pure vanilla extract and 1 tsp ground cinnamon and mix until well-combined.
  5. Stir in 5 cups old-fashioned oats, until well-coated.
  6. Spread granola batter onto prepared baking sheet in a thin, even layer.
  7. Bake about 30 mins, flipping granola at the 13-min mark and then turning just the tray at the 25-min mark.
  8. Let cool completely.
  9. Break into desired size of pieces.
